JOB SUMMARY: To produce assigned range of breads to achieve department goals for sales, margin, labor expense and customer satisfaction.
ESSENTIAL JOB FUNCTIONS:
PRODUCTION:
- Develop and maintain knowledge of supply delivery schedules.
- Develop full understanding of baking production schedules.
- Prepare and produce products specified by Supervisor.
- Develop a working understanding of department products and product lines.
- Maintain full compliance with health department regulations.
- Follow established record-keeping procedures and recipes to meet goals of product consistency, margin and labor data collection, and accurate, up-to-date records of production.
- Maintain storage and prep areas in clean, orderly condition and in good working order; report problems areas.
- Maintain product display areas throughout shift to ensure fullness, visual attractiveness, proper signage, and cleanliness.
- Follow established department procedures for maintaining and developing sourdough cultures.
- Follow established storage and labeling procedures.
CUSTOMER SERVICE:
- Demonstrate knowledge of optimal service standards and product sampling techniques.
- Be clear about production schedules in order to respond to customer inquires, develop familiarity with special order systems.
- Become familiar with and comfortable with helping customers in the deli area and taking PFD catering orders.
- Be prepared to assist customers over the phone and in person, including knowledge of bakery product availability, ingredients and allergens.
ADMINISTRATION:
- Agree to and sign GFM recipe security agreement.
- Attend regular department meetings.
- Demonstrate optimal standards for teamwork with other staff.
MAINTENANCE:
- Maintain bakery area in sanitary and orderly condition, following guidelines set by Manager.
- Participate in cooperative dishwashing as needed.
- Proactively clean up spills and remove trash.
- Notify Manager of equipment repair and/or replacement needs.

QUALIFICATIONS:
- Demonstrated professional experience in development of sourdough cultures, dough production, hand shaping product and bread baking.
- Familiarity with natural foods and dietary restrictions.
- Manual dexterity with hazardous equipment and ability to handle multiple demands, work long and/or irregular hours, and lift 50 pounds.
- Ability to work independently and manage time productively.
